TAREN'S EASY TOFU SCRAMBLE RECIPE
The title says it all. Oh, and did we mention it’s delicious? Feel free to change up the veggies with whatever you have on hand for variety.
WHAT YOU’LL NEED:
1 tbsp coconut or avocado oil
1/2 onion, chopped
1 tbsp garlic, crushed
1/2 tsp turmeric powder
1 package medium firm tofu
8 oz cherry tomatoes
2 handfulls fresh spinach or kale
2 tbsp fresh parsley (for ganish)
1 green onion, chopped (for garnish)
1/2 tsp cumin
Salt to taste
Chilli flakes to taste
TO PREP:
Heat a pan over medium-low heat. Add the oil, onion and salt and cook until soft. Add garlic, cumin and chilli flakes and saute until fragrant. Add the turmeric and tomatoes and cook for another 4 minutes. Stir in tofu until it begins to take on the colour of the turmeric and is warmed through. Add spinach and cook for another 2-4 minutes. Plate and serve with fresh parsley and green onions.
